SIP/RTP Prometheus metrics exporter

Sauron is a passive SIP/RTP packet sniffer that captures call traffic, tracks dialog state machines, and exposes Prometheus metrics for call quality monitoring: jitter, packet loss, call setup time, and post-dial delay. Requires CAP_NET_RAW (granted via the systemd unit or setcap).
